Pork Boston Butt. Also known as the pork shoulder top end cut, it has the blade bone intact and for very good reason, as when cooked well the blade bone should pull out with ease, cooked low and slow for pulled pork. Popular Pit Master cut as it combines the rich juices with added rubs and the smoky flavour. Also a great oven roast.
